Simple Semur Ayam Kentang Recipe

This Semur Ayam Kentang, or Indonesian-style chicken stew with potatoes, is a comforting and flavorful dish that combines tender chicken and crispy potatoes in a savory sauce. The use of aromatic spices and a hint of sweet soy sauce creates a rich, satisfying meal perfect for any occasion.

Ingredients:

  • 350 grams whole chicken breast
  • 3 medium potatoes
  • 1 lime
  • Water, as needed
  • Oil, for sautéing

Spice Paste:

  • 4 red chili peppers
  • 1 clove garlic
  • 4 shallots
  • 2 candlenuts
  • 10 black peppercorns
  • Salt, to taste
  • Sugar, to taste
  • Seasoning, to taste
  • Ground nutmeg, to taste

Additional Ingredients:

  • 1 small tomato
  • 1 stalk lemongrass
  • 1 bay leaf
  • Sweet soy sauce, to taste

Instructions:

  1. Prepare the Chicken:

    • Cut the chicken breast into bite-sized pieces, rinse thoroughly, and marinate with lime juice. Let it sit for 15 minutes, then rinse again.
  2. Prepare the Potatoes:

    • Peel and cut the potatoes into cubes. Rinse well. Heat oil in a pan and fry the potatoes until golden brown. Set aside.
  3. Prepare the Spice Paste:

    • Toast the candlenuts over the stove until fragrant. Grind the red chili peppers, black peppercorns, garlic, and shallots into a smooth paste.
  4. Cook the Base:

    • Heat a small amount of oil in a pan. Sauté the spice paste until aromatic. Add the chopped lemongrass, bay leaf, and diced tomato. Cook until the tomato softens and the mixture becomes fragrant. Stir in the ground nutmeg.
  5. Cook the Chicken:

    • Add the chicken pieces to the pan and sauté briefly until the chicken is no longer pink. Pour in the sweet soy sauce and enough water to cover the chicken. Bring to a simmer.
  6. Combine and Simmer:

    • Once the chicken is partially cooked, add the fried potatoes. Season with salt, sugar, and seasoning to taste. Stir occasionally and adjust the flavor as needed. Continue cooking until the chicken is tender and the sauce has thickened.
  7. Finish and Serve:

    • Once the chicken is fully cooked and the sauce has reduced to a desired consistency, remove from heat. Serve hot with steamed rice or as a standalone dish.

Enjoy this hearty and flavorful Semur Ayam Kentang, a delightful representation of traditional Indonesian cuisine that’s sure to please your taste buds!
