Lilva’s Vegetable Recipe – Lilva Ki Sabzi (Recipe in English)

Instructions:

  1. Heat Oil: Begin by heating oil in a deep pan or kadhai on medium heat.

  2. Add Whole Spices: Once the oil is hot, add the bay leaf, cloves, and cardamom. Let them sizzle for about 15 seconds to release their fragrance.

  3. Cook Onions: Add the finely chopped onion to the pan and sauté it until it softens and turns slightly golden.

  4. Add Potatoes: Now, add the diced potatoes to the pan. Stir well and cook for about 5 minutes, allowing the potatoes to soften a little.

  5. Add Ginger Garlic Paste: Next, stir in the ginger-garlic paste and the onion paste. Cook everything for 2 to 3 minutes, letting the flavors blend.

  6. Spice It Up: After 3 minutes, add red chili powder, turmeric powder, and coriander powder to the pan. Stir well and cook for another 2 minutes to allow the spices to release their flavors.

  7. Incorporate Curd and Salt: Add the curd (yogurt) and salt as per your taste. Stir the mixture well and let it cook for another 3 minutes.

  8. Add Green Gram: Add the green gram (lilve) to the pan. Mix everything thoroughly.

  9. Simmer: Cover the pan with a lid and cook for 5 minutes. This will allow the green gram to cook and absorb all the flavors.

  10. Add Water: After 5 minutes, add water as needed to adjust the consistency of the curry. Stir and let the curry cook for another 4 to 5 minutes.

  11. Garnish and Serve: Turn off the heat, and garnish the vegetable with finely chopped fresh coriander. Serve the Lilva Ki Sabzi with Panchmel Dal, Boondi Raita, and Phulka for a complete and delicious lunch experience.
