Instructions

  1. Soak the Lentils: Begin by washing the arhar dal thoroughly and soaking it in water for about 30 minutes.

  2. Cook the Lentils: Drain the soaked lentils and transfer them to a pressure cooker. Add water according to your preference. Toss in the chopped tomato, seal the cooker, and cook until you hear three whistles. Once done, allow the cooker to cool before opening. Mash the cooked lentils and set aside.

  3. Prepare the Okra: In a pan, heat 2 tablespoons of oil. Once hot, add the okra and sauté until it becomes crispy. Remove and set aside.

  4. Temper the Spices: In the same pan, add a little more oil if needed. When heated, add mustard seeds, fenugreek seeds, asafoetida, curry leaves, and dry red chillies. Sauté for about 15 seconds.

  5. Add the Gram Flour: Stir in the gram flour and roast until it turns a golden brown, ensuring it doesn’t burn.

  6. Combine Ingredients: Gradually pour in water while stirring to prevent lumps from forming. Once well combined, add the mashed dal, tamarind paste, jaggery, and salt. Mix thoroughly.

  7. Simmer the Kadhi: Bring the mixture to a boil and let it simmer for 3 to 5 minutes, allowing the flavors to meld together.

  8. Finish with Okra: Finally, add the previously cooked okra into the kadhi and let it simmer for an additional 5 minutes.

  9. Serve: Serve your hot Sindhi Kadhi with steamed rice and a sprinkle of fresh coriander if desired.
