Instructions:
Step 1: Prepare the Dough
Start by making the dough. In a large mixing bowl, pour 300 ml of lukewarm water and add the 10 g of salt. Stir gently until the salt dissolves. Then, add the dry active yeast and 1 teaspoon of malt, mixing everything well to help activate the yeast. Let it sit for a few minutes.
Gradually add the 500 g of all-purpose flour, incorporating it into the water mixture with your hands until a rough dough forms. Once the dough begins to come together, drizzle in 20 g of extra virgin olive oil and continue kneading. Use your hands to knead the dough for about 10 minutes or until it is smooth, elastic, and no longer sticky.
Form the dough into a ball and place it in a clean, lightly floured bowl. Cover the bowl with plastic wrap or a damp cloth. Set the bowl in a warm, draft-free location, such as inside a turned-off oven with the light on. Allow the dough to rise for about 1.5-2 hours or until it has doubled in size.
Step 2: Prepare the Filling Ingredients
While the dough is rising, prepare the ingredients for the filling. In a small bowl, pour the 300 ml of tomato passata and season it with a drizzle of olive oil, a pinch of fine salt, and 1 teaspoon of oregano. Stir well to combine and set aside.
Next, slice the black olives into rounds and place them in a small dish. Drain the capers and set them aside, ready to use. Chop the anchovy fillets into small pieces, and cut the mozzarella cheese into small cubes. Be sure to drain any excess moisture from the mozzarella to prevent the dough from becoming soggy during baking.
Step 3: Shape the Pizza
Once the dough has risen, remove it from the bowl and place it onto a floured surface. Roll the dough into a large rectangle, approximately 50 cm by 45 cm (about 20 inches by 18 inches) in size, using a rolling pin.
Spread a generous layer of the prepared tomato sauce over the dough, leaving a small border around the edges. Layer the spicy salami slices evenly over the sauce, followed by the chopped anchovies, capers, black olives, and cubed mozzarella cheese.
Step 4: Roll and Seal
To assemble the Stromboli, brush the edges of the dough with a little water to help seal the roll. Starting from one long side, carefully roll the dough into a tight log, ensuring that the filling stays inside. Once rolled, tuck in the ends and pinch them together to prevent any filling from leaking out during baking.
Shape the rolled pizza into a U-shape, placing it onto a baking sheet lined with parchment paper. Brush the top of the Stromboli with extra virgin olive oil for a golden, crispy finish. Sprinkle a few fresh basil leaves on top for added aroma and flavor.
Step 5: Bake
Preheat your oven to 200°C (390°F) and place the baking sheet with the Stromboli into the oven. Bake for 20-25 minutes or until the crust is golden brown and the filling is bubbling. You can check the doneness by gently tapping the crust—if it sounds hollow, it’s ready.
Step 6: Serve
Once the Stromboli is baked to perfection, remove it from the oven and let it cool for a few minutes before slicing. Serve it warm, garnished with more fresh basil if desired, and enjoy the delightful combination of savory fillings wrapped in a perfectly crisp dough.
Tips for Perfect Stromboli:
- Ensure the mozzarella is well-drained to prevent excess moisture from making the dough soggy.
- For an extra crispy crust, bake the Stromboli on a preheated baking stone or a thick baking sheet.
- Feel free to customize the filling with your favorite ingredients such as bell peppers, mushrooms, or different types of cheeses.
