Delicious Struffoli with Mango, Berry, and Honey Creams

Struffoli with Creams (Struffoli con Creme al Latte)

Ingredients:

Honey 250g
Condensed milk 100g
Butter 60g
Eggs 2
Egg yolk 1
Orange zest 1/2
Lemon zest 1/2
Fine salt 1 pinch
Blueberries 125g
Raspberries 125g
Condensed milk (for sauces) 120g
Mango 1
Peanut oil (for frying) As needed

Instructions:

To prepare the struffoli with creams, begin by making the dough: sift the flour into a large bowl, then grate the lemon zest. Add the eggs, butter, a pinch of salt, and condensed milk to the center. Knead the mixture vigorously for about 6-7 minutes until you achieve a smooth and firm dough. Once the dough is well combined, shape it into a ball and wrap it in plastic wrap. Let it rest for at least 30 minutes.

After the resting time has passed, work the dough again for a few more minutes. Then divide it into small pieces, rolling each piece into a thin strip, thinner than your finger, on a lightly floured surface. Next, cut the strips into small pieces, creating tiny nuggets of dough.

In a frying pan, heat the peanut oil and fry the struffoli in batches, making sure not to overcrowd the pan.

While the struffoli are frying, prepare the creams. For the berry cream, place the blueberries in a blender or food processor and blend them into a smooth sauce. Pass the mixture through a fine sieve to remove the solids and obtain a silky-smooth berry sauce. Add 40g of condensed milk to the sauce and pass it through the sieve once more to combine.

For the mango cream, cut the mango into chunks and blend it into a smooth puree. Add 40g of condensed milk and mix well.

Now, prepare the caramel to coat the struffoli: in a pan, heat the honey over low heat until it becomes a smooth syrup. Once the honey has reached the desired consistency, add the struffoli and stir gently to coat them in the syrup.

To assemble the dish, pour each of the three creams (berry, mango, and honey caramel) into separate serving dishes. Arrange the crispy struffoli on top of each cream, and your struffoli with creams are ready to be served!
