Instructions

  1. Prepare the Stuffing: In a wide pan, heat the Figaro Pure Olive Oil over medium heat. Add the finely grated radish along with salt, and sauté on high heat. Stir continuously until all the moisture from the radish evaporates, leaving a dry mixture. This usually takes about 5-7 minutes. Once done, turn off the heat and mix in the remaining stuffing ingredients: cumin powder, ginger, gram flour (if using), chopped coriander leaves, and green chillies. Stir well to combine and allow the stuffing mixture to cool down to room temperature.

  2. Make the Dough: In a mixing bowl, combine the whole wheat flour and 1 teaspoon of salt. Gradually add water, a little at a time, while kneading to form a smooth and pliable dough. Once kneaded, cover the dough with a damp cloth and let it rest for about 15 minutes. After resting, divide the dough into 8 equal portions and roll them into smooth balls.

  3. Assemble the Parathas: Dust a clean, flat working surface with some flour. Take one portion of the dough and flatten it slightly with your fingers, then roll it out into a circle about 3 inches in diameter. Place approximately 2 tablespoons of the prepared stuffing in the center of this circle. Carefully gather the edges of the dough over the stuffing and pinch them together to seal the filling inside. Gently flatten the stuffed ball and roll it out again into a larger circle, about 6-7 inches in diameter, taking care not to let the filling spill out.

  4. Cook the Parathas: Heat a skillet or tawa over medium heat. Once hot, place the rolled-out paratha onto the skillet. Cook for about 2-3 minutes, or until small bubbles start to form on the surface. Flip the paratha, then smear a little Figaro Pure Olive Oil or ghee on the cooked side. Cook the second side for another 2-3 minutes until it develops golden-brown spots. Repeat this process for the remaining dough portions and filling.

  5. Serve: Once all the parathas are cooked, serve them hot, either on their own or accompanied by your choice of chutney, raita, or pickles. The stuffed mooli parathas can be enjoyed as a hearty breakfast, a filling lunch, or even as a delightful dinner option.

Cooking Tips:

  • Moisture Management: Make sure to cook the radish until all moisture evaporates; otherwise, the filling may leak out while rolling.
  • Experiment with Fillings: You can add other ingredients like paneer or cooked potatoes to the filling for a variation.
  • Make Ahead: Prepare the stuffing and dough in advance. You can refrigerate them and assemble the parathas when you are ready to cook.

By combining the vibrant flavors of radish and spices in a wholesome dough, these Stuffed Mooli Parathas are not only a feast for the taste buds but also a nutritious option for health-conscious individuals. Enjoy making this delightful dish and share it with family and friends!
