Simple Tahu Telor Recipe
Ingredients:
- Bean Sprouts (Kecambah): Quantity as desired
- Eggs: 5
- Tofu: 4 pieces, cut into cubes
- Soy Sauce: To taste
- Salt: To taste
- Parsley: To taste
- Chicken Bouillon Powder: To taste
- For the Spice Paste:
- Garlic: 2 cloves
- Shallots: 3 cloves
- Bird’s Eye Chilies (Cabe Rawit): 3
- Red Chilies (Cabe Merah Keriting): 3

Prepare the Bean Sprouts: Clean the bean sprouts thoroughly and soak them in warm water for about 3 minutes. Drain and set aside.

Prepare the Egg Mixture: In a bowl, beat the eggs and season with a pinch of salt, chicken bouillon powder, and parsley. Add the tofu cubes and mix well to coat.

Fry the Tahu Telor: Heat oil in a pan over medium heat. Pour in the egg-tofu mixture and cook until golden brown and crispy on the outside. Once done, transfer to a serving plate.

Prepare the Spice Paste: In a mortar and pestle or blender, coarsely grind the garlic, shallots, bird’s eye chilies, and red chilies to make a spice paste.

Cook the Spice Paste: In the same pan used for frying, add a little oil and sauté the spice paste until fragrant. Season with a bit of salt. Add soy sauce to taste, then incorporate the bean sprouts. Stir-fry until the bean sprouts are cooked through and well coated with the spices.

Assemble the Dish: Pour the spiced bean sprout mixture over the fried tofu and egg mixture.
