Vegetable Uttapam

Vegetable Uttapam is a delightful South Indian breakfast dish, similar to dosa but slightly thicker. It’s a great way to use up leftover idli dosa batter and can be enjoyed as a wholesome breakfast or snack. Topped with a variety of fresh vegetables, such as carrots, capsicum, onions, and tomatoes, Vegetable Uttapam is not only nutritious but also delicious. Serve it with coconut chutney and sambar for a complete meal.

Ingredients:

  • 1 cup Idli Dosa Batter
  • 1/4 cup Onion, finely chopped
  • 1/4 cup Green Bell Pepper (Capsicum), finely chopped
  • 1/4 cup Carrot (Gajjar), finely chopped
  • 1 Tomato, finely chopped and deseeded
  • 2 Green Chillies, finely chopped
  • 2 tablespoons Coriander (Dhania) Leaves, finely chopped
  • Oil, for greasing

Preparation Time: 10 minutes
Cook Time: 10 minutes

Instructions:

  1. Begin by placing the dosa batter in a bowl. If necessary, add water to adjust the consistency.
  2. Finely chop all the vegetables and set them aside.
  3. Heat a non-stick tawa or griddle and grease it with oil.
  4. Once the tawa is hot, pour a ladleful of the dosa batter onto it and spread it in a circular motion, ensuring it’s not too thin.
  5. As the batter starts to cook, small holes will form on the surface. At this point, sprinkle the chopped vegetables evenly over the batter.
  6. Drizzle a little oil around the edges and in the center of the uttapam.
  7. Reduce the flame to medium, cover, and cook for a few seconds until the vegetables are slightly cooked.
  8. Press the uttapam gently with the back of a spatula and flip it to cook the other side for 2-3 minutes until golden brown.
  9. Remove from the tawa and transfer to a serving plate.
  10. Serve hot with coconut chutney and sambar.
