Wheat Rava Halwa Recipe
Description:
Wheat Rava Halwa is a fragrant, mouth-watering sweet dish traditionally prepared with wheat rava, jaggery, and cardamom powder. This dessert is especially popular as a prasad (offering) during Sri Satyanarayana Swamy rituals at Annavaram Temple in Andhra Pradesh. In this version, I’ve added a twist by combining brown sugar (demerara sugar) and jaggery for a rich, depth of flavor. This North Indian delicacy is both indulgent and satisfying, making it perfect for festive occasions or as a sweet end to your meal.

Instructions
-
Crush the Jaggery: Begin by crushing the jaggery into smaller pieces and set it aside. This will help it melt more easily during the cooking process.
-
Fry Cashew Nuts: In a heavy-bottomed pan, heat 1-1/2 tablespoons of ghee. Once the ghee is hot, add cashew nuts and fry them until they turn golden brown. Remove and set them aside for garnishing later.
-
Cook the Wheat Rava: In the same pan, add 1 cup of water and bring it to a boil. Once boiling, add the broken wheat (dalia/godumai rava) to the pan. Cover and cook the wheat rava on low heat for about 20 minutes, or until it softens. Be cautious to avoid overcooking, as the rava should be soft but not mushy.
-
Add Sweeteners: To the softened wheat rava, add 1 cup of brown sugar and 1 cup of crushed jaggery. Stir well and cook for another 5 to 8 minutes until the sugar and jaggery melt, transforming into a syrupy consistency. Make sure everything is mixed well, so the syrup is absorbed by the rava.
-
Incorporate Ghee: Once the syrup is absorbed, add the remaining 1-1/2 tablespoons of ghee. Stir the mixture, allowing the ghee to fully integrate with the rava. Cook for an additional 2 minutes until the ghee is completely absorbed.
-
Final Touches: Sprinkle in 1 teaspoon of crushed cardamom powder and mix well. Add the fried cashew nuts, reserving some for garnishing if desired. Give everything one final stir.
-
Serve & Enjoy: Turn off the heat and your Wheat Rava Halwa is ready to be served! This dish can be enjoyed as a sweet treat after your meal or as part of festive celebrations and special occasions.
