Radish Leaves Pachadi (Mooli Ke Patte Ki Pachadi)

Ingredients:

Tomato 1, chopped
Dried red chilies 10
Green chilies 2, chopped
Salt To taste
Turmeric powder 1 teaspoon
Oil 2 tablespoons
Mustard seeds (Rai) 1 tablespoon
Black urad dal 1 tablespoon
Fenugreek seeds (Methi) 1 teaspoon
Asafoetida (Hing) 1 pinch
Curry leaves (Kadhi Patta) 5 leaves
Garlic cloves 3, crushed
Tamarind 2-inch piece

Preparation Time: 20 minutes

Cooking Time: 15 minutes


Instructions:

  1. Preparation:
    Begin by preparing all the ingredients. Wash and chop the radish leaves and tomato. Chop the green chilies and break the dried red chilies into pieces. Soak tamarind in water for a few minutes to soften, then extract the pulp.

  2. Tempering:
    Heat oil in a pan. Add mustard seeds, black urad dal, and fenugreek seeds. Let them crackle for a few seconds. Then add the asafoetida and sauté for a brief moment.

  3. Spicing:
    Add the green chilies, dried red chilies, and curry leaves to the pan. Allow them to fry for about 15 seconds. Then, add the chopped tomatoes and radish leaves, followed by the crushed garlic. Cook for 3 to 5 minutes until the mixture softens and the flavors blend together. Remove from the heat and let it cool down.

  4. Grinding the Pachadi:
    Once the mixture cools down, transfer it to a blender. Add salt, turmeric powder, and tamarind pulp. Grind it into a smooth paste.

  5. Final Tempering:
    In a small tempering pan, heat a bit more oil. Add mustard seeds, black urad dal, fenugreek seeds, dried red chilies, and curry leaves. Let this temper for 15 seconds and then pour it over the ground pachadi mixture.

  6. Serving:
    Mix everything well and your Radish Leaves Pachadi is ready! Serve it as a side dish with mixed vegetable sambar and rice for a wholesome and fulfilling meal.
