Sundakkai and Methi Leaves Sambar
This South Indian recipe combines the health benefits of Sundakkai (Turkey berries) and Methi Leaves (Fenugreek), making it an excellent choice for those with diabetes or kidney-related issues. Ingredients
- 1/2 cup Sundakkai (Turkey Berries), slit in half
- 1/4 cup Methi Leaves (Fenugreek Leaves), tightly packed
- 1/2 cup Arhar Dal (Split Toor Dal), boiled and mashed
- 1/2 Tomato, chopped
- 1 lemon-sized Tamarind, soaked in water and diluted
- 1/2 tsp Turmeric Powder (Haldi)
- 2 tsp Sambar Powder
- 1 tsp Coriander Powder (Dhania)
- 1/2 tsp Mustard Seeds (Rai/ Kadugu)
- 1/4 tsp Cumin Seeds (Jeera)
- 1 Dry Red Chili
- 1/4 tsp Asafoetida (Hing)
- Oil, as required
- Salt, to taste
- A few Curry Leaves
- A few Coriander (Dhania) Leaves, for garnish
- Water, as required

Instructions
- Start by slitting the Sundakkai (Turkey Berries) after removing the stem. Do not cut them into two parts.
- Wash the Methi Leaves (Fenugreek) thoroughly. Soak the tamarind in water and dilute it to extract the juice.
- Heat oil in a heavy-bottomed pan. Add Asafoetida (Hing) and sauté for 10 seconds.
- Add the Mustard Seeds, Cumin Seeds, and Dry Red Chili to the pan. Cook for another 10 seconds.
- Next, add the slitted Sundakkai (Turkey Berries) and let them fry for 3-4 minutes. Add the Curry Leaves and stir well.
- Add the Methi Leaves (Fenugreek) and cook until they become soft.
- Add the chopped Tomato, Turmeric Powder, Sambar Powder, Coriander Powder, and salt. Stir and fry for about a minute.
- Pour in the tamarind juice along with the remaining water. Let the mixture boil for 8-10 minutes.
- After boiling, add the cooked Arhar Dal (Split Toor Dal) and stir. Allow the sambar to thicken to your desired consistency.
- Garnish with fresh Coriander (Dhania) Leaves.
Serve the Sundakkai & Methi Leaves Sambar with steamed rice, Cauliflower Thoran, and Elai Vadam for a complete and delicious South Indian meal!
