Sabsige Soppu Kootu (Dill Leaf Curry)

Ingredients:
- 12 sprigs Dill leaves (finely chopped)
- 1/4 cup Fresh coconut (grated)
- 1/2 cup Arhar dal (Split Toor Dal)
- 1 Potato (Aloo), chopped into 1/2-inch cubes
- 1/4 cup Raw Peanuts (Moongphali)
- 1 tsp Black pepper powder
- 1 tbsp White Urad Dal (Split)
- 1 Green Chilli (chopped)
- 1 tsp Jaggery (powdered, optional)
- Salt (to taste)
- For Tempering:
- 1 Dry Red Chilli
- 5 Curry leaves
- 1 tsp Mustard seeds (Rai/ Kadugu)
- 1 tbsp Oil

Instructions:
- Begin by washing and cleaning the dill leaves thoroughly. Chop them finely and set aside.
- Wash and soak the toor dal for about 15 minutes. Drain and add the dal to a pressure cooker along with the chopped dill leaves, peanuts, and potato cubes. Pour in 2 cups of water and cook for 3 whistles. Turn off the heat and allow it to cool.
- Meanwhile, heat a little oil in a pan and sauté the white urad dal, green chilies, and black pepper. Once the urad dal turns golden, add the grated coconut. Turn off the heat and let the mixture cool. Once cooled, blend it into a smooth paste in a mixer.
- After the cooker has cooled down, open it and check if the dal is cooked. Stir in the ground coconut paste, salt, jaggery powder (if using), and 1 cup of water. Cook on a low to medium flame, bringing it to a creamy consistency.
- For tempering, heat oil in a pan. Add mustard seeds and let them crackle. Add the dry red chillies and curry leaves, then pour the tempering over the kootu.
- Serve your Sabsige Soppu Kootu hot with chapatis or steamed rice, accompanied by carrot poriyal and elai vadam for a complete South Indian meal.
