Instructions:

  1. Use the coarse blade on a grinder to chop the cucumbers, green peppers, red bell peppers, celery, onions, and garlic powder.
  2. Combine all the chopped vegetables in a large bowl.
  3. Sprinkle salt over the vegetables and toss to combine.
  4. Cover the bowl with cold water and let it stand for 4 hours to allow the flavors to meld.
  5. After 4 hours, drain the vegetables thoroughly in a colander, pressing out all excess liquid.
  6. In a large pot, combine the white vinegar, mustard seeds, and celery seeds.
  7. Bring the vinegar mixture to a boil over medium heat, stirring occasionally.
  8. Once boiling, stir in the drained vegetables and simmer for 10 minutes, allowing the flavors to develop.
  9. While the relish is simmering, prepare your canning jars by washing them in hot, soapy water and sterilizing them.
  10. Pack the hot relish into the prepared jars, leaving about 1/2 inch of space at the top.
  11. Wipe the rims of the jars with a clean, damp cloth to remove any residue.
  12. Place the lids on the jars and screw the bands on firmly but not too tight.
  13. Process the jars in a boiling water bath for 10 minutes to ensure proper sealing.
  14. Carefully remove the jars from the water bath and allow them to cool completely before storing them in a cool, dark place.
  15. Enjoy your homemade Dill Cucumber Relish on sandwiches, hot dogs, burgers, or as a zesty addition to salads and appetizers. It’s a versatile condiment that adds a burst of flavor to any dish! 🌶️🥒
