Instructions:
- Use the coarse blade on a grinder to chop the cucumbers, green peppers, red bell peppers, celery, onions, and garlic powder.
- Combine all the chopped vegetables in a large bowl.
- Sprinkle salt over the vegetables and toss to combine.
- Cover the bowl with cold water and let it stand for 4 hours to allow the flavors to meld.
- After 4 hours, drain the vegetables thoroughly in a colander, pressing out all excess liquid.
- In a large pot, combine the white vinegar, mustard seeds, and celery seeds.
- Bring the vinegar mixture to a boil over medium heat, stirring occasionally.
- Once boiling, stir in the drained vegetables and simmer for 10 minutes, allowing the flavors to develop.
- While the relish is simmering, prepare your canning jars by washing them in hot, soapy water and sterilizing them.
- Pack the hot relish into the prepared jars, leaving about 1/2 inch of space at the top.
- Wipe the rims of the jars with a clean, damp cloth to remove any residue.
- Place the lids on the jars and screw the bands on firmly but not too tight.
- Process the jars in a boiling water bath for 10 minutes to ensure proper sealing.
- Carefully remove the jars from the water bath and allow them to cool completely before storing them in a cool, dark place.
- Enjoy your homemade Dill Cucumber Relish on sandwiches, hot dogs, burgers, or as a zesty addition to salads and appetizers. It’s a versatile condiment that adds a burst of flavor to any dish! 🌶️🥒
