Instructions

  1. In a heavy saucepan, combine light corn syrup, sugar, salt, and water.
  2. Cook the mixture over medium heat, stirring constantly until the sugar is completely dissolved.
  3. Continue to cook without stirring until a small amount of the mixture dropped into cold water forms a hard ball at 250°F (120°C).
  4. While the syrup is cooking, beat the egg white until stiff peaks form in a large bowl using an electric mixer.
  5. Gradually add about one fourth of the hot syrup to the beaten egg white, beating continuously until the mixture holds its shape.
  6. Cook the remaining syrup until it reaches 300°F (150°C), or until a small amount of the mixture separates into hard and brittle threads when dropped into cold water.
  7. Gradually pour the hot syrup into the egg white mixture, continuing to beat until the mixture begins to hold its shape.
  8. Add almond extract and desired food coloring to tint the nougat to a delicate shade.
  9. Beat in butter and margarine until the mixture becomes very thick and satiny.
  10. Stir in chopped almonds and cherries until well combined.
  11. Press the nougat mixture into a buttered 8x8x2-inch pan, smoothing the top with a spatula.
  12. Allow the nougat to stand until firm.
  13. Once firm, turn the nougat out of the pan and cut into pieces measuring 1 1/2 inches by 1 inch.
  14. Individually wrap each piece of nougat in waxed paper.
  15. For the best flavor, store the wrapped nougat in a cool place for several days before serving.
