Ingredients:

  • 4 ounces almond paste
  • 1 cup sugar
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 3/4 cup low-fat milk
  • 3 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 1 tablespoon cornstarch
  • 1/4 cup confectioners’ sugar (for dusting)
  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 1/4 cup Amaretto liqueur
  • Sliced almonds for topping

Instructions:

Time Description
Preheat oven to 350°F (175°C).
Generously grease and flour a tube pan or your preferred baking dish.
In a large bowl, cream together almond paste, sugar, and butter until smooth and fluffy.
Add vanilla extract, eggs, and milk to the almond mixture, blending until well incorporated.
Gradually fold in flour, salt, baking powder, and cornstarch until a thick, fluffy batter forms.
If serving cake bottom side up, sprinkle sliced almonds into the bottom of the prepared pan.
Spoon the batter into the prepared pan and sprinkle sliced almonds on top.
Bake for 50-55 minutes or until the cake is evenly golden brown and slightly cracked on top.
Once cooled, dust the cake with confectioners’ sugar or prepare the Amaretto glaze for drizzling.
For the glaze, combine water and granulated sugar in a small saucepan over low heat until dissolved.
Stir in Amaretto liqueur and continue heating for an additional 2-3 minutes.
Allow the glaze to cool slightly before drizzling over the cake.
Optionally, you can poke holes into the top of the cake before applying the glaze for better absorption.
Serve slices of this delectable coffee cake with your favorite hot beverage and enjoy!

Notes:

  • Make sure to prepare the cake at least one day before serving to allow the flavors to meld and intensify.
  • If Amaretto liqueur is unavailable, you can substitute with 1/4 cup water combined with 1/2 teaspoon almond extract for the glaze.
  • Feel free to customize the cake by adding dried fruits or additional nuts to the batter for extra texture and flavor.
  • Store any leftovers in an airtight container at room temperature for up to several days, though it’s unlikely there will be any left!
