Blender Bearnaise Sauce Recipe 🍽️

Ingredients:

1/4 cup White wine
2 tbsp Tarragon vinegar
1 Shallot
1/8 Onion
2 pinches White pepper
1 tbsp Tarragon leaves
1 tbsp Chervil
3 tbsp Fresh parsley
1/2 tsp Dried parsley flakes
3/4 tsp Salt
1 cup Real butter

Instructions:

  1. Prepare Aromatics:

    • Combine white wine, tarragon vinegar, shallots, onion, white pepper, tarragon leaves, chervil, and fresh parsley in the top of a double boiler.
  2. Reduce Mixture:

    • Cook the mixture until it’s reduced by half. It will become very concentrated. Allow it to cool.
  3. Prepare Blender:

    • Have ready in your blender the cooled herb mixture, 3 egg yolks, and salt.
  4. Blend:

    • Blend the mixture for about 5 seconds until combined.
  5. Heat Butter:

    • Melt the butter in a saucepan until it’s bubbling, but be careful not to burn it.
  6. Combine:

    • Remove the center stopper from the blender cap.
    • Turn the blender motor on HIGH.
    • Pour the hot butter through the opening in the blender cap in a steady stream while the motor is running, which should take about 30 seconds.
  7. Check Consistency:

    • The sauce should be finished, about the consistency of thin mayonnaise. If not, blend on HIGH for another 5 seconds.
  8. Final Touches:

    • Note that the hot butter will cook the egg yolks, so there’s no need to worry about eating raw eggs.
  9. Serve:

    • Serve immediately, or you can keep the sauce warm by placing the blender container in warm water.
