Instructions:
-
Make the base:
- Line the bottom of a greased 13 x 9-inch pan with wax paper (cut to fit), then grease the paper.
- Preheat the oven to 350°F (175°C).
- In a saucepan, melt 5 tablespoons of butter with cocoa powder, stirring until smooth.
- Remove from heat, then beat in the light brown sugar and egg. Stir in the all-purpose flour, salt, and vanilla until well combined.
- Spread the mixture evenly in the prepared baking pan and bake for about 10 minutes or until the base is firm to the touch and starts to pull away slightly from the sides of the pan.
- Let the base cool completely.
-
Prepare the topping:
- In another saucepan, melt 6 tablespoons of butter. Add the light brown sugar and dark corn syrup, stirring constantly with a wooden spoon until the mixture comes to a boil over moderate heat.
- Continue to boil, stirring occasionally, until the mixture reaches the hard-ball stage, which is about 250°F (120°C).
- Remove the mixture from the heat and carefully stir in the heavy cream and walnuts.
- Bring the mixture back to a boil and continue boiling until it reaches the soft-ball stage, around 240°F (115°C).
- Remove the mixture from the heat and let it cool for about a minute before stirring in the dark rum.
-
Assemble the bars:
- Pour the prepared caramel and walnut mixture over the cooled base, spreading it evenly.
- Allow the bars to cool completely, then chill them covered with foil for at least 2 hours or until firm.
- Once chilled, run a thin knife around the edge of the pan to loosen the bars, then turn them out onto a cutting board.
- Cut the bars into 30 equal pieces.
-
Storage:
- Store the bars in an airtight container, separating each layer with sheets of wax paper to prevent sticking.
- Keep the bars chilled in the refrigerator for up to 1 week.
These Caramel Walnut Fudge Bars are a heavenly combination of rich flavors and delightful textures, making them the perfect treat for any occasion. Enjoy every decadent bite!
