  • 4 cups sugar
  • 1 cup flour
  • 1 cup confectioners’ sugar

Instructions

24 hours before Cut a circle of parchment paper to fit an 8-inch round cake pan.
Preheat your oven to 425 degrees Fahrenheit.
Combine chocolate and butter in the top of a double boiler.
Set it over gently simmering water and stir until melted and smooth.
Remove from heat and transfer to a bowl, setting it aside.
Wipe out the top of the double boiler for later use.
Combine eggs and sugar in the top of the double boiler.
Set it over gently simmering water and whisk constantly until sugar is dissolved and the mixture darkens, barely warm to the touch.
Remove from heat and beat at high speed with an electric mixer until eggs have tripled in volume, reaching the consistency of lightly whipped cream (about 5 to 10 minutes).
Gently fold in the flour.
Carefully stir 1/3 of the egg mixture into the melted chocolate to loosen it, then fold the chocolate into the remaining egg mixture until thoroughly combined.
Turn the mixture into the prepared pan.
Bake until the cake is soft in the center but crusty on top, approximately 15 minutes.
Let the cake cool completely in the pan, then freeze it overnight. (The cake can be kept in the freezer for up to one month before serving.)
1 hour before serving Whip the cream with confectioners’ sugar and vanilla until stiff.
Invert the cake onto a serving platter. (Spinning the pan briefly over high heat will help loosen the cake from the pan.)
Spread 2/3 of the whipped cream over the top of the cake.
Mound chocolate curls in the center.
Pipe rosettes around the edge of the cake using the remaining whipped cream.
Refrigerate until about 15 minutes before serving.
Pass raspberry puree separately.
