Step | Description |
---|---|
1 | In a mixing bowl, cream together the peanut butter and butter until smooth and well combined. |
2 | Add the margarine, confectioners’ sugar, and vanilla extract to the bowl, and mix until the ingredients are thoroughly incorporated. |
3 | Shape the mixture into 1-inch balls and place them on a baking sheet lined with waxed paper. Refrigerate the balls for at least 30 minutes to firm them up. |
4 | In a double boiler, melt the chocolate chips (or chocolate bark coating) until smooth and glossy. If using chocolate bark coating, use about Five 2 oz. blocks. |
5 | Using a toothpick, dip each peanut butter ball into the melted chocolate, coating about 3/4 of the ball. Allow any excess chocolate to drip off before placing the buckeyes chocolate side down on the waxed paper. |
6 | Let the buckeyes set at room temperature or speed up the process by refrigerating them until the chocolate coating hardens. |
7 | Once set, serve the buckeyes on a tray lined with miniature muffin liners for a festive touch, and watch them disappear in no time! |
Tips:
- For a smoother consistency, ensure the peanut butter and butter are at room temperature before mixing.
- To make the dipping process easier, use a toothpick to handle the peanut butter balls.
- If chocolate bark coating is preferred over chocolate chips and paraffin wax, simply substitute it in equal amounts for a convenient and delicious alternative.
- Store any leftover buckeyes in an airtight container in the refrigerator for up to two weeks, though they’re unlikely to last that long!
