Ingredients:

  • 7 ounces of dark chocolate
  • 7 tablespoons of butter
  • 2 tablespoons of brandy
  • 4 eggs
  • 4 egg yolks
  • 4 teaspoons of vanilla extract
  • 1 1/2 cups of plain flour
  • 2 1/2 cups of sugar

Instructions:

Step Description
1 Prepare 8 mini pudding basins, each with a capacity of 6 fl oz or 175 ml, generously brushed with melted butter.
2 In a large heatproof bowl, placed over a saucepan of barely simmering water (ensuring the bowl doesn’t touch the water), combine broken-up chocolate, butter, and brandy.
3 Allow the chocolate and butter to melt slowly over low heat for about 6-7 minutes. Stir until smooth and glossy once melted.
4 In a separate mixing bowl, whisk sugar, whole eggs, yolks, and vanilla extract with an electric hand whisk until doubled in volume (about 5-10 minutes). Achieve a thick, mousse-like consistency.
5 Pour the melted chocolate mixture around the edge of the egg mixture. Sift flour over the mixture.
6 Carefully fold everything together using a large metal spoon, employing patient and thorough folding and cutting movements for about 3-4 minutes.
7 Divide the mixture evenly between the prepared pudding basins, filling them just below the top. Place them on a baking tray.
8 Optionally, cover the puddings with clingfilm and refrigerate or freeze until needed.
9 Preheat the oven to 200ยฐC or 400ยฐF. Remove clingfilm from the puddings and bake on the center shelf for 14 minutes if chilled, or 12 minutes if not, until risen and firm to the touch, yet with melting insides.
10 Let the puddings stand for 1 minute before using a palette knife to loosen and turn them out onto individual serving plates.
11 If baking from frozen, allow about 15 minutes of cooking time and 2 minutes of standing time before turning out.
12 Serve immediately, accompanied by chilled cream for pouring over.
