Ingredients:

  • 1/3 cup sugar
  • 5 eggs
  • 1/3 cup marsala wine
  • 1/2 cup mascarpone cheese

  • 2 oz bittersweet chocolate, grated

Instructions:

  1. Use Italian ladyfingers, also known as Savoiardi, for the best results.
  2. Feel free to experiment with different spirits or liqueurs such as marsala, rum, brandy, or Amaretto, based on your preference.
  3. If mascarpone cheese is unavailable, substitute with 8oz of ricotta and double the amount of whipping cream.
  4. If you don’t have an espresso maker, prepare strong black coffee as a substitute.
  5. In a heavy pot over medium-low heat, whisk together sugar and eggs until frothy.
  6. Continue whisking until the mixture begins to thicken.
  7. Whisk in 1/4 cup of marsala wine and continue cooking until the mixture coats the back of a spoon.
  8. Scrape the mixture into a bowl and set aside.
  9. Whip the cream until it holds its shape.
  10. Using the same beaters, whisk together mascarpone cheese and fresh lemon rind until the mixture softens.
  11. Fold in the egg/marsala mixture and whipped cream to create a smooth mascarpone cream.
  12. Combine the espresso coffee with the remaining 2 tablespoons of marsala wine.
  13. Dip the ladyfingers into the coffee mixture, soaking them evenly.
  14. Arrange a layer of soaked ladyfingers on the bottom of an 11×7 inch dish.
  15. Spread half of the mascarpone cream over the ladyfingers.
  16. Sprinkle grated chocolate over the mascarpone layer.
  17. Add another layer of soaked ladyfingers on top.
  18. Finish by spreading the remaining mascarpone cream over the ladyfingers.
  19. Garnish with the remaining grated chocolate.
  20. Refrigerate the Tiramisu for at least 4 hours, allowing the flavors to meld together and the dessert to set.
  21. Serve chilled and enjoy the heavenly delight of homemade Tiramisu!
