Ingredients:
- 1/3 cup sugar
- 5 eggs
- 1/3 cup marsala wine
- 1/2 cup mascarpone cheese
- 1 fresh lemon rind
- 2 cups espresso coffee
- 1 package (24 pieces) ladyfingers
- 2 oz bittersweet chocolate, grated
Instructions:
- Use Italian ladyfingers, also known as Savoiardi, for the best results.
- Feel free to experiment with different spirits or liqueurs such as marsala, rum, brandy, or Amaretto, based on your preference.
- If mascarpone cheese is unavailable, substitute with 8oz of ricotta and double the amount of whipping cream.
- If you don’t have an espresso maker, prepare strong black coffee as a substitute.
- In a heavy pot over medium-low heat, whisk together sugar and eggs until frothy.
- Continue whisking until the mixture begins to thicken.
- Whisk in 1/4 cup of marsala wine and continue cooking until the mixture coats the back of a spoon.
- Scrape the mixture into a bowl and set aside.
- Whip the cream until it holds its shape.
- Using the same beaters, whisk together mascarpone cheese and fresh lemon rind until the mixture softens.
- Fold in the egg/marsala mixture and whipped cream to create a smooth mascarpone cream.
- Combine the espresso coffee with the remaining 2 tablespoons of marsala wine.
- Dip the ladyfingers into the coffee mixture, soaking them evenly.
- Arrange a layer of soaked ladyfingers on the bottom of an 11×7 inch dish.
- Spread half of the mascarpone cream over the ladyfingers.
- Sprinkle grated chocolate over the mascarpone layer.
- Add another layer of soaked ladyfingers on top.
- Finish by spreading the remaining mascarpone cream over the ladyfingers.
- Garnish with the remaining grated chocolate.
- Refrigerate the Tiramisu for at least 4 hours, allowing the flavors to meld together and the dessert to set.
