Cooking Instructions:
- Begin by pounding out the veal slices until they are of even thickness.
- Dust the veal slices lightly with flour and season them with salt and white pepper.
- Place a slice of prosciutto on one side of each veal slice, then top with a fresh sage leaf.
- Fold the veal over to cover the prosciutto and sage, sealing the edges by gently pounding them.
- Heat the extra virgin olive oil in a large, heavy skillet over medium-high heat until it shimmers and becomes fragrant.
- Saute the veal slices in the skillet for about 20 seconds on each side until they are lightly browned. Work in batches if necessary, to avoid overcrowding the pan.
- Once all the veal slices are cooked, remove them from the skillet and set aside.
- Add the dry marsala wine to the skillet, stirring to dissolve any browned bits from the bottom of the pan.
- Allow the marsala wine to come to a boil, then reduce the liquid to about half of its original volume.
- Remove the skillet from the heat and gradually whisk in the butter, adding it in small pieces until the sauce is creamy and well combined.
- Return the cooked veal slices to the skillet, tossing them gently in the sauce until they are evenly coated.
- Serve the veal saltimbocca immediately, accompanied by your choice of side dishes such as bitter green vegetables or wild rice.
