Description: Pizzelle iron is an absolute necessity to craft these delicate, lacy delights, but let me assure you, the investment is entirely worth it! Straight from the recipe collection of my friend Dianne’s aunt, these Pizzelle Cookies are nothing short of heavenly. Keep in mind, prep time excludes overnight chilling, and cook time is a mere estimation, as every Pizzelle iron has its own personality. You might need to experiment with a few cookies before mastering the art.

Ingredients:

  • 10 eggs
  • 1 cup butter
  • 1/4 cup vanilla extract
  • 1/4 cup rum
  • 4 cups sugar
  • 6 cups flour
  • 1 tsp salt

Instructions:

  1. Prepare the Batter: In a large mixing bowl, combine beaten eggs with sugar, vanilla extract, butter, and rum.

  2. Incorporate Flour Mixture: Gradually add sifted flour and salt to the egg mixture, stirring until well combined.

  3. Chill the Dough: Cover the dough and chill it in the refrigerator overnight, allowing the flavors to meld and the dough to firm up.

  4. Preheat the Pizzelle Iron: Heat your Pizzelle iron over the stovetop or plug in your electric one, ensuring it’s adequately hot before proceeding.

  5. Portion and Cook: Using a spoon, drop portions of the dough onto the bottom half of the hot, ungreased Pizzelle iron. Fold the top of the iron onto the dough and cook according to your iron’s specific instructions, typically around 30-45 seconds per batch. (Keep in mind, the first cookie tends to be sacrificial, so don’t be disheartened if it doesn’t turn out perfectly.)

  6. Cool and Stack: Transfer the hot cookies onto a cooling rack or cookie sheet to cool completely. These delicate wafers stack beautifully once cooled, offering a crisp texture with intricate designs.

  7. Repeat and Enjoy: Continue the process until all the dough is used up, savoring the aroma that fills your kitchen with each batch. The yield of cookies will depend on the size of your Pizzelle iron, but with this recipe, you can expect around 100 delightful treats.
