Servings: 18 muffins (depending on size of tin)

Ingredients:

For the Filling:

  • 1 package (8 ounces) cream cheese
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 tablespoons brown sugar

For the Streusel Topping:

  • 4 1/2 tablespoons all-purpose flour
  • 5 tablespoons white sugar
  • 3/4 teaspoon ground cinnamon
  • 3 tablespoons butter, chilled and cut into small pieces
  • 3/4 cup chopped pecans

For the Muffin Batter:

  • 2 1/2 cups all-purpose flour
  • 2 cups white sugar
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 can (15 ounces) canned pumpkin
  • 1/3 cup olive oil
  • 2 teaspoons vanilla extract

Instructions:

  1. Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).

  2. Grease and flour 18 muffin cups or line them with paper liners for easier cleanup.

  3. Prepare the Filling: In a medium bowl, beat cream cheese until soft and creamy. Add egg, vanilla extract, and brown sugar, then beat until smooth. Set aside.

  4. Prepare the Streusel Topping: In another bowl, mix together all-purpose flour, white sugar, ground cinnamon, and chopped pecans. Add chilled butter pieces and cut in with a fork until the mixture resembles coarse crumbs. Set aside.

  5. Prepare the Muffin Batter: In a large bowl, sift together all-purpose flour, white sugar, baking powder, ground cinnamon, and salt.

  6. Make a well in the center of the dry ingredients and gradually incorporate eggs, canned pumpkin, olive oil, and vanilla extract. Beat together until smooth and well combined.

  7. Assemble the Muffins: Fill each prepared muffin cup about halfway with the pumpkin batter.

  8. Carefully add about one tablespoon of the cream cheese filling right in the middle of the batter in each muffin cup. If you’re using paper liners, try to keep the cream cheese from touching the paper to prevent sticking.

  9. Sprinkle the streusel topping evenly over the muffin batter in each cup, covering the cream cheese filling.

  10. Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean and the tops are lightly golden brown.

  11. Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

  12. Serve these delightful Pumpkin Cream Cheese Muffins warm or at room temperature. Enjoy the creamy filling, crunchy streusel topping, and warm spices with every bite!

These muffins are perfect for sharing with loved ones during the holiday season or enjoying as a special treat any time of year. They’re sure to become a new favorite in your baking repertoire!
