Ingredients:

  • 1/2 cup hazelnuts
  • 3/4 cup butter
  • 2 cups sugar
  • 3/4 cup cocoa powder
  • 3 eggs
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 1/2 cups fresh raspberries
  • 1 cup frozen raspberries
  • 3/4 cup white chocolate chips
  • 2 oz white chocolate
  • 1 tbsp butter (for ganache)
  • 1 tsp almond extract
  • 1/2 cup whipping cream
  • 3 oz dark chocolate (for ganache)
  • 1 tsp vanilla extract (for ganache)
  • Raspberry jam

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).

  2. Prepare Hazelnuts: Spread hazelnuts in a single layer on a baking sheet and bake for 10 to 12 minutes, or until the skins begin to flake off. Let them cool slightly, then wrap them in a kitchen towel and rub to remove as much of the skins as possible. Once cooled completely, process the nuts in a food processor until finely chopped. Set aside.

  3. Prepare Pans: Lightly grease two 8-inch square baking pans. Line the bottoms of the pans with foil and lightly grease the foil. Set aside.

  4. Make Batter: Melt the butter in a medium saucepan over medium heat. Remove from heat and blend in the sugar and cocoa powder. Stir in the eggs and vanilla until smooth, then add the chopped hazelnuts and flour, mixing until just blended.

  5. Bake Brownies: Pour the batter evenly into the prepared pans. Gently press fresh raspberries into the batter. Bake for 15 to 20 minutes, or until the center is just set. Allow the brownies to cool completely in the pans on a wire rack.

  6. Prepare Ganaches: While the brownies are cooling, prepare the ganaches. First, make the white ganache by combining 1/2 cup of white chocolate chips and whipping cream in a medium saucepan. Heat over medium heat until the chocolate is half melted, stirring occasionally. Remove from heat and stir in the remaining 1/2 cup of white chocolate chips and almond extract until smooth. Keep warm.

  7. Make Chocolate Ganache: For the chocolate ganache, combine whipping cream and butter in a small saucepan. Heat over medium heat until the mixture boils, stirring frequently. Remove from heat and stir in the dark chocolate and vanilla until smooth. Return to heat for 20 to 30-second intervals as needed to melt the chocolate. Keep warm.

  8. Assemble Brownies: Once the brownies are cooled, hold a wire rack over the top of one pan and invert to release the brownie. Remove the foil and discard. Place the cut-over brownie on top of the first brownie, then invert both to create a layered effect.

  9. Decorate: Spread the remaining white ganache evenly over the top brownie layer. Next, spread raspberry jam on top of the ganache.
