Fresh cream 2 tablespoons

Instructions

  1. Prepare the Carrot Halwa Layer:

    • Start by heating a medium-sized non-stick pan. Add the grated carrots and cook them on medium heat for about 5 minutes, stirring occasionally.
    • Pour in the milk and saffron-infused milk. Mix everything well and cover the pan with a lid. Let it cook for about 3-4 minutes until the milk has almost evaporated.
    • Once the milk is absorbed, add the sugar and fresh cream. Stir continuously for 5 minutes, allowing the mixture to thicken.
    • As the mixture begins to dry up, add half of the khoya (100 grams). Stir it in and cook for an additional 3-4 minutes. Once the halwa mixture has thickened and is dry, remove it from the heat.
    • Grease a tart plate or any other plate of your choice with ghee and transfer the halwa into the plate. Press it gently with your palms to even out the mixture.
  2. Chill the Carrot Halwa Layer:

    • Place the prepared tart plate with the carrot halwa into the refrigerator and allow it to chill for 10-15 minutes. This will help it set properly.
  3. Prepare the Khoya Layer:

    • In a separate medium-sized non-stick pan, add ghee and heat it until it melts.
    • Add the remaining khoya to the pan and mix it well. Let the khoya cook for a couple of minutes until it becomes sticky.
    • Once the khoya becomes sticky, add the remaining sugar and continue mixing until it’s fully incorporated. Switch off the heat once the khoya mixture is well combined and sticky.
  4. Assemble the Gajar Halwa Barfi:

    • Take the chilled carrot halwa layer from the refrigerator and gently spread the khoya mixture on top of it. Press the khoya layer gently with your palms to ensure it sticks evenly.
  5. Garnish and Serve:

    • Garnish the Gajar Halwa Barfi with dry fruits of your choice for a crunchy texture and festive touch.
    • Once the barfi has set, cut it into desired shapes. Serve it as a sweet, festive treat to your family and friends, especially on Diwali!
