Boston Dream Cream Pie

Ingredients

  • 3 eggs, separated
  • 1 tsp vanilla extract
  • 1/2 cup granulated sugar, divided
  • 1/2 tsp salt
  • 3/4 cup cake flour
  • 1/2 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour
  • 1 1/2 cups milk
  • 6 egg yolks
  • 2 tsp vanilla extract (for filling)
  • 1/2 tsp salt (for filling)
  • 3 tbsp light corn syrup
  • 2 tbsp water
  • 4 oz semisweet chocolate

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line it with wax paper.

  2. Beat egg yolks and vanilla extract in a mixing bowl until blended.

  3. Gradually add half of the granulated sugar to the egg yolks, beating until the mixture is thick and pale.

  4. In a separate bowl, beat egg whites and salt until soft peaks form. Gradually add the remaining granulated sugar, beating until stiff peaks form.

  5. Fold the yolk mixture into the beaten egg whites gently.

  6. Sift cake flour over the egg mixture and fold in gently, being careful not to overmix.

  7. Pour the batter into the prepared cake pan and bake for about 25 minutes, or until the top springs back lightly when touched.

  8. Loosen the cake by running a metal spatula around the sides of the pan. Invert the cake onto a wire rack, remove the pan, and peel off the wax paper. Turn the cake right side up and let it cool completely on the rack.

  12. Prepare the glaze: In a saucepan, bring 1/2 cup granulated sugar, light corn syrup, and water to a boil over low heat, stirring constantly until the sugar has dissolved. Remove from heat and add the semisweet chocolate. Let stand for 1 minute, then whisk until smooth.

  13. Pour the glaze gradually over the assembled cake, allowing it to drip down the sides. Let the glaze set.
