Derived from Lennie’s “Michael Symon’s Drunken Cabbage,” this recipe undergoes significant modifications, utilizing available ingredients. Initially lacking caraway seeds, they were added the next day, enhancing flavor. Resulting in a subtly sweet dish, the beer infusion offsets potential cabbage-induced flatulence. Versatile, it serves as a delightful side or a hearty main dish.

Ingredients:

  • 8 slices bacon
  • 1 onion, sliced
  • 1/2 head green cabbage, chopped
  • 1 bottle beer
  • 1-2 tsp caraway seeds
  • 3 tbsp prepared yellow mustard
  • 2 tbsp sugar
  • Salt and pepper, to taste

Instructions:

Step Description
1 In a large skillet, fry bacon until almost crisp.
2 Add onion slices and sauté until tender.
3 Reserve bacon grease unless excessive, then drain.
4 Stir in chopped cabbage until well coated with the bacon mixture.
5 In a 2-cup measuring cup, pour beer. Add caraway seeds, mustard, sugar, salt, and pepper. Stir until well combined; expect foaming.
6 Pour beer mixture over cabbage in the skillet. Mix thoroughly with an egg spatula.
7 Cover with a lid and simmer until cabbage is tender, approximately 30 minutes.
