Gulai Ikan Nila Tempoyak (Durian Gravy with Nile Tilapia)

Ingredients

Nile Tilapia 1/2 kg
Red chilies (Cabe merah) 100 g
Bird’s eye chilies (Cabe rawit) to taste
Turmeric leaves (Daun kunyit) a few leaves
Ground turmeric (Kunyit giling) a small amount
Tempoyak (Fermented durian) 50 g or to taste
Water as needed
Salt to taste
Sugar to taste

Instructions

  1. Prepare the Fish: Clean the Nile tilapia thoroughly, then season with tamarind and salt to taste.

  2. Blend the Chilies: In a blender, combine the red and bird’s eye chilies, then transfer the mixture to a cooking pot.

  3. Mix the Paste: Add the tempoyak and ground turmeric to the blended chilies, stirring until the mixture is smooth and free of lumps.

  4. Cook the Base: Pour in enough water and add the turmeric leaves. Stir well and bring to a boil until the sauce thickens.

  5. Add the Fish: Once the sauce is thickened, gently add the seasoned Nile tilapia into the pot.

  6. Season and Simmer: Adjust the taste with salt and sugar, then stir until the fish is cooked through and flavors meld beautifully.

  7. Serve: Your Gulai Tempoyak is ready to be served, showcasing the rich flavors of durian and spices in every bite.
