Eggless Peanut Butter Cookies Recipe

You can also make them vegan-friendly by substituting regular milk with dairy-free nut milk, soy milk, or coconut milk. These cookies are a delightful combination of crunchy yet melt-in-your-mouth texture. If you prefer a chewier version, simply reduce the baking time by 3-4 minutes.

Ingredients:
- 1 cup Peanut Butter (1/2 cup smooth peanut butter + 1/2 cup crunchy peanut butter)
- 1 cup All Purpose Flour (Maida)
- 1/2 cup Powdered Sugar
- 1/4 teaspoon Baking Powder
- 1/4 teaspoon Baking Soda
- 4 tablespoons Milk

Instructions:
- Begin by sifting the flour, baking powder, baking soda, and salt into a mixing bowl. Set aside.
- In a separate, large bowl, cream the peanut butter using a hand mixer on low speed for 3-4 minutes.
- Add the powdered sugar and 2 tablespoons of milk, then continue creaming the mixture for another 3 minutes.
- Gradually add the flour mixture to the peanut butter mixture, mixing on low speed until everything is well combined. Use your hands to gently form the dough.
- If the dough feels too thick, add an extra tablespoon of milk and refrigerate the dough for 20 minutes.
- Once chilled, divide the dough into small, lemon-sized balls and place them on a baking sheet.
- Use a fork to press down on each ball, creating a criss-cross pattern that’s typical for peanut butter cookies. Make sure to leave enough space between the cookies, as they will spread while baking.
- Preheat your oven to 180°C (350°F) and bake the cookies for 13-14 minutes, or until the edges turn a light golden brown.
- Allow the cookies to cool completely; they will become crisp as they cool.
- Store the cookies in an airtight container, where they will stay fresh for up to 5 days.
