Gavar Ki Sabzi Recipe

Ingredients:
- 2 cups cluster beans (Gawar), cleaned and chopped
- 1 onion, chopped
- 2 tomatoes, chopped
- 3 cloves garlic, ground
- 1/2 teaspoon ginger, grated
- 2 teaspoons coriander powder
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 1/2 teaspoons red chili powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon asafoetida
- Salt, to taste
- Coriander leaves, chopped, as needed
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Instructions:
- Heat oil in a pressure cooker. Add mustard seeds, and after about 10 seconds, add cumin seeds.
- Once the cumin seeds splutter, add asafoetida, turmeric powder, garlic, and chopped onion. Cook for a few seconds until the onions soften.
- Stir in ginger, red chili powder, and coriander powder, mixing well. Cook for an additional 15 seconds.
- Add chopped tomatoes and cluster beans (Gawar) to the pot and stir to combine.
- Add salt and 1/4 cup water, then close the lid. Cook until one whistle is released, then reduce the heat and let it simmer for another 5 minutes.
- Garnish with fresh coriander leaves.
- Serve Gawar ki Sabzi with garlic daal and phulkas for a complete lunch.
