Instructions:

Step Description
1 Crumble the khoya and place it in a large mixing bowl. (Note: Khoya is dried whole milk available at Indian sweetmeat shops. If unavailable, you can make a substitute by combining whole milk powder with a little pure ghee until it forms a dough consistency.)
2 Sieve the plain flour and baking soda together into the bowl with the khoya.
3 Add the cardamom powder and crushed saffron strands to the mixture.
4 Mix all the ingredients well to form a soft dough.
5 Gradually add milk to the dough as needed until it reaches the desired consistency for kneading.
6 Divide the dough into small, evenly-sized balls, making approximately 25-30 gulab jamuns.
7 Heat the ghee in a deep frying pan until it’s very hot.
8 Remove the pan from the heat and allow it to cool slightly.
9 Carefully place the gulab jamun balls into the hot ghee.
10 Return the pan to the heat and fry the gulab jamuns until they turn a medium brown color.
11 Once fried, remove the gulab jamuns from the ghee and transfer them to a bowl of sugar syrup.
12 Allow the gulab jamuns to soak in the syrup for about 10 minutes.
13 Drain the gulab jamuns and transfer them to a serving dish.
14 Repeat the frying and soaking process for all the gulab jamun balls.
15 Once all the gulab jamuns are prepared, pour the remaining sugar syrup over them.
16 Optionally, lightly microwave or warm the gulab jamuns over boiling water before serving for a warm, indulgent treat.

To Make the Sugar Syrup:

  1. In a heavy-bottomed saucepan, combine the sugar and enough water to just cover the sugar.
  2. Bring the mixture to a boil, then add a tablespoon of milk to help separate any impurities.
  3. Skim off any impurities that rise to the surface, then bring the syrup back to a boil.
  4. Test the syrup’s consistency by dropping it from a spoon; it should form a thin, single thread when ready.
