Instructions

  1. Prepare Dough in the Bread Machine

    • Measure the first five ingredients (water, bread flour, brown sugar, salt, and active dry yeast) into your bread machine according to the order recommended by your machine’s manufacturer.
    • Select the dough setting and let the machine handle the mixing and initial rise.
  2. Shape the Bagels

    • Once the cycle is complete, remove the dough and place it on a lightly floured surface.
    • Divide the dough evenly into 10 portions and roll each into a ball.
    • Gently press your thumb through the center of each ball and slowly stretch the hole to create a bagel shape. Aim for a 1-inch hole as the dough will expand.
  3. Proof the Bagels

    • Arrange the shaped bagels on a greased baking sheet, cover them with a damp cloth, and let them rise in a warm place until slightly puffy, about 10-15 minutes.
  4. Boil the Bagels

    • In a large saucepan, bring 3 quarts of water to a rapid boil and add 1 tablespoon of sugar.
    • Using a slotted spoon, carefully drop 2-3 bagels into the boiling water at a time, making sure they’re not crowded.
    • Boil the bagels for 1-2 minutes on each side. This step gives them their chewy texture.
    • Remove the bagels with the slotted spoon and place them on a wire rack to cool briefly.
  5. Egg Wash and Toppings

    • Preheat your oven to 400°F (200°C).
    • Brush each boiled bagel with the beaten egg for a shiny crust. If desired, sprinkle with poppy seeds or sesame seeds.
  6. Bake

    • Line a baking sheet with parchment paper and sprinkle a thin layer of cornmeal to prevent sticking.

  7. Cool and Serve
