Description:
When my friend Connie invited us over for tacos one day, I was pleasantly surprised to discover that she was making tortillas from scratch. While they might not be “authentic” by some standards, this method she uses to prepare them is impressively simple, yet delicious. If you’re looking for a quick, homemade alternative to store-bought tortillas, these corn tortillas are the perfect choice. Soft, fresh, and full of flavor, they elevate any taco night with minimal effort.

Ingredients:

Instructions:

  1. Prepare the batter: In a large mixing bowl, combine the flour, yellow cornmeal, eggs, salt, and water. Using an electric mixer, blend the ingredients together until they form a smooth, slightly thick batter. Ensure the consistency is similar to a pancake batter; adjust with more water if necessary.

  2. Heat the griddle: Preheat your griddle or large skillet over medium heat. To check the temperature, you can sprinkle a few drops of water on the surface—if they sizzle, it’s ready for cooking.

  3. Oil the griddle: Lightly mist the griddle with oil, using either a spray bottle or a paper towel to spread it evenly across the surface.

  4. Cook the tortillas: Use a 1/2 cup measuring cup to pour the batter onto the hot griddle, filling it about two-thirds full. Use the back of a spoon to gently spread the batter into a thin, round shape. Cook the tortilla for 2 minutes on each side, or until it is lightly golden and firm to the touch.

  5. Serve and enjoy: Once the tortillas are cooked, remove them from the griddle and place them on a plate. Keep them warm by covering them with a clean kitchen towel while you cook the remaining tortillas.

Tips for Success:

  • If you don’t have a griddle, you can also cook the tortillas in a non-stick skillet. Just ensure it’s preheated and lightly oiled before adding the batter.
  • To keep the tortillas warm while serving, wrap them in a towel or place them in a tortilla warmer.
  • For a gluten-free option, you can substitute the flour with a gluten-free all-purpose flour blend.

Enjoy these homemade corn tortillas as the perfect base for tacos, burritos, or even as a side to your favorite dishes! Whether you’re hosting a taco night or simply craving something fresh, these tortillas are a quick and tasty option.
