Ingredients:

Quantity Ingredient
2 cups Flour
2 1/4 tsp Quick-rising yeast
1/2 tsp Salt
1 1/4 cups Hot water
1 – 1 1/2 cups Flour

Instructions:

  1. Combine the first four ingredients in a large bowl.
  2. Beat well for about 1 minute until thoroughly mixed.
  3. Gradually mix in the remaining flour, adding just enough to make a soft, sticky dough.
  4. Turn out the dough onto a floured board and knead for 5 minutes until smooth and elastic.
  5. Divide the dough into 8 equal-sized balls.
  6. Roll out each ball into a round shape, approximately 1/4 inch thick and 6 inches in diameter.
  7. Place the rounds on a lightly greased cookie sheet, optionally sprinkled with cornmeal.
  8. Let the rounds rise in a warm place for 25-35 minutes until they have increased in size.
  9. Preheat your oven to 450°F (230°C).
  10. Bake the pita rounds for 4 minutes, then turn them over and bake for an additional 4 minutes or until lightly browned.
  11. Remove the pita rounds from the oven and immediately wrap them in a clean dishtowel for 3-4 minutes. This helps them to remain soft.

Tips:

  • If you don’t have cornmeal, it’s okay to skip this step; it’s not essential.
