Simple Beef Meatballs: Bakso Sapi Ga Ribet

Ingredients:

  • 500 grams of beef: Cut into small pieces for easier processing.
  • 85 grams of ice cubes (approximately 17% of the beef weight).
  • 100 grams of tapioca flour (20% of the beef weight).
  • 2 egg whites.
  • 1 tablespoon of salt.
  • 1 tablespoon of beef bouillon powder.
  • 1 teaspoon of granulated sugar.
  • 2 tablespoons of fried shallots, ground or mashed until fine.
  • 2 tablespoons of garlic powder (alternatively, use ground fried garlic).
  • 1 tablespoon of sesame oil.
  • 1 teaspoon of black pepper (optional; not used in this version).
  • 1 teaspoon of baking powder (optional; not used in this version).

Instructions:

  1. Prepare the Beef: Start by cutting the beef into small chunks to make it easier to process. Place all the beef pieces into a food processor. Add the ice cubes, which should be about 17% of the beef’s weight, and blend until the mixture is evenly ground and smooth.

  2. Season the Meat: Once the beef is finely processed, add the egg whites, salt, sugar, beef bouillon powder, fried shallots, garlic powder, and sesame oil. These ingredients not only enhance the flavor but also help in removing the raw smell of the beef. Blend thoroughly until the mixture is well combined.

  3. Incorporate Tapioca Flour: Gradually add the tapioca flour, which should make up about 20% of the beef’s weight. Add half of the tapioca flour to the mixture and blend well. Stir the mixture, then add the remaining tapioca flour and blend again until fully incorporated. For a firmer texture, knead the mixture by hand for about 20 minutes. If you prefer a quicker method, continue blending in the food processor for approximately 5 minutes.

  4. Shape the Meatballs: Transfer the mixture to a large bowl if you’re kneading by hand. Wet your hands and a spoon with water to prevent sticking. Form the mixture into meatballs by squeezing and rolling them between your fingers. Drop each meatball into a pot of simmering water. Avoid using boiling water to prevent the meatballs from breaking apart.

  5. Cook the Meatballs: Once all the meatballs are in the pot, reduce the heat to a gentle simmer. Allow the meatballs to cook until they float to the surface, which indicates they are done. This usually takes a few minutes. Once they are floating, let them cook for an additional 2-3 minutes.

  6. Cool the Meatballs: Prepare a bowl of ice water. Immediately transfer the cooked meatballs to the ice water to stop the cooking process and maintain their chewy texture.

  7. Serve: Your meatballs are now ready to be served. They can be enjoyed with beef broth, yellow noodles, white noodles, chili sauce, soy sauce, and crackers.

  8. Optional Broth: If you don’t have beef bones or brisket for the broth, you can make a simple broth from the cooking water of the meatballs. Bring the water to a boil to remove any foam that rises to the top. Add sautéed shallots, garlic, chopped green onions, and a bit of beef bouillon powder. Adjust the seasoning to taste.
