Simple Indonesian Chicken Stew (Semur Ayam Sederhana)

Ingredients:

  • 1 kg chicken, cut into 10–12 pieces, cleaned thoroughly
  • 1 large onion, sliced
  • Ground black pepper, to taste
  • Seasoning (optional)
  • Salt, to taste
  • Kecap Bango (sweet soy sauce), to taste
  • Water, as needed
  • 3 bay leaves
  • 5 kaffir lime leaves, stems removed

For the Spice Paste:

  • 6 cloves garlic
  • 5 shallots
  • 1 thumb-sized piece of ginger
  • 3 candlenuts

Instructions:

  1. Prepare the Spice Paste: Using a food processor or mortar and pestle, grind together the garlic, shallots, ginger, and candlenuts until you achieve a smooth paste.

  2. Sauté Aromatics: In a large pan or wok, heat a small amount of oil over medium heat. Add the sliced onion and the ground spice paste. Sauté until the onion becomes translucent and the paste is fragrant.

  3. Add Herbs and Liquid: Stir in the kaffir lime leaves and bay leaves. Pour in enough water to cover the chicken pieces. Bring the mixture to a boil.

  4. Cook the Chicken: Once the water is boiling, add the chicken pieces. Season with salt, ground black pepper, and optional seasoning. Drizzle in the kecap Bango (sweet soy sauce) according to your taste preference. Reduce the heat to a simmer and cook until the chicken is tender and the liquid has reduced to your desired consistency.

  5. Adjust Seasoning: Taste and adjust the seasoning as needed, adding more salt, pepper, or kecap Bango if necessary.

  6. Serve: Once the chicken is cooked through and the flavors have melded together, remove from heat. Serve hot with steamed rice and enjoy this flavorful Indonesian classic.
