Ingredients:

  • 300g Cherry Tomatoes
  • 2 tbsp Olive Oil
  • 3 Garlic Cloves (finely chopped)
  • 2 Rosemary Sprigs
  • Salt (to taste)
  • Black Pepper Powder (to taste)

Preparation Time: 10 minutes
Cook Time: 45 minutes

Instructions:

  1. Preheat the oven to 180°C (350°F) and let it warm for about 15 minutes.
  2. Spread the cherry tomatoes on a baking tray. Drizzle olive oil over them. Add salt and black pepper powder, and mix well.
  3. Crush the garlic cloves in a mortar and pestle and scatter it over the tomatoes on the tray. Break the rosemary sprigs into small pieces and add them to the tray. Mix everything thoroughly.
  4. Place the baking tray in the oven and roast for 30 minutes.
  5. After roasting, remove the tray from the oven and allow the tomatoes to cool for a few minutes.
  6. Once cooled, transfer the roasted tomatoes, garlic, and rosemary into a blender and puree until smooth.
  7. Pour the puree into a saucepan with 1 cup of water. Bring it to a boil. Add salt and black pepper to taste. Stir and cook for a few more minutes.
  8. Once the soup reaches a good consistency, transfer it to a bowl and serve.
  9. Serve the Roasted Cherry Tomato Soup with garlic bread for a delicious dinner starter or enjoy it as an evening snack.
