Egg-Free Yogurt and Apple Cake Recipe

Category: Desserts
Servings: 8

This delightful egg-free yogurt and apple cake is perfect for those who love the refreshing taste of yogurt combined with the natural sweetness of apples. The recipe uses simple ingredients to create a light, fluffy cake that’s ideal for any occasion.

Ingredients

Ingredient Amount
Fuji Apples 400g
Greek Yogurt 250g
All-Purpose Flour (00) 250g
Granulated Sugar 125g
Whole Milk 150g
Baking Powder 16g
Ground Cinnamon 2g
Powdered Sugar (for dusting) to taste

Instructions

  1. Prepare the Ingredients: Start by bringing all your fresh ingredients (milk, yogurt, etc.) to room temperature. This ensures that the cake batter will mix more easily and create a consistent texture.

  2. Combine Wet Ingredients: In a large bowl, pour the whole milk and Greek yogurt. Use a whisk to mix them together until smooth and well combined. Gradually add the granulated sugar, continuing to whisk until it dissolves completely.

  3. Add the Dry Ingredients: Place a fine-mesh sieve over the bowl and sift in the all-purpose flour. Stir vigorously to ensure the flour is incorporated fully into the wet mixture, avoiding any lumps.

  4. Mix the Leavening Agents: Next, add the baking powder and ground cinnamon. Stir well to combine, ensuring the cinnamon is evenly distributed throughout the batter.

  5. Prepare the Apples: Peel the Fuji apples and remove the cores. You should end up with about 300g of apple slices. Cut the apples into small cubes, approximately 2 cm in size. As you cut the apples, immediately add them to the batter to prevent browning.

  6. Combine Apples with Batter: Gently fold the apple cubes into the batter using a spatula. Make sure the apples are evenly mixed into the batter.

  7. Bake the Cake: Pour the batter into a 24 cm round cake pan. For the best results, use a springform pan to make removing the cake easier. Smooth the top of the batter with a spatula for an even surface.

  8. Optional Dusting: After the cake has finished baking and cooled, you can serve it with a light dusting of powdered sugar to add an elegant touch.

Baking Time

  • Bake at 180°C (350°F) for approximately 35-40 minutes or until a toothpick inserted into the center comes out clean.

This cake is incredibly versatile—serve it as an afternoon treat or as a light dessert for family and friends. The combination of Greek yogurt and apples keeps the cake moist, and the hint of cinnamon adds a warm, cozy flavor. The egg-free aspect makes it an excellent choice for those with dietary restrictions, without compromising on taste or texture.

Enjoy your homemade egg-free yogurt and apple cake!
