Methi Seeds (Fenugreek Seeds) 1/2 teaspoon
Mustard Seeds (Rai/Kadugu) 1/2 teaspoon
Onions (thinly sliced) 2
Garlic (finely chopped) 6 cloves
Ginger (finely chopped) 1 inch
Green Chillies (slit) 2
Curry Leaves 2 sprigs
Tomatoes (finely chopped) 6
Garam Masala Powder 1 teaspoon
Red Chilli Powder 1 teaspoon
Coriander Powder (Dhania) 2 teaspoons
Turmeric Powder (Haldi) 1/2 teaspoon
Salt to taste

Instructions:

  1. Prepare the Moong Dal Dosa Batter:

    • Soak the yellow moong dal and methi seeds together in a bowl, and soak the idli rice separately in another bowl. Let both soak for at least 3 hours.
    • After soaking, grind the moong dal and rice mixture to a smooth, thick batter. Add salt to taste and set it aside. Allow the batter to ferment for about 8 hours or overnight.
  2. Boil and Prepare the Eggs:

    • Boil the eggs in sufficient water until they are hard boiled (approximately 10 minutes).
    • Once boiled, peel the eggs and slice them into halves or quarters. Sprinkle some red chilli powder and salt over the sliced eggs, and set them aside for later use.
  3. Make the Egg Roast Masala:

    • Heat coconut oil in a pan over medium heat. Once the oil is hot, add mustard seeds, methi seeds, and curry leaves. Allow them to crackle and release their aromatic flavors.
    • Next, add the green chillies, ginger, garlic, and onions. Sauté them until the onions turn soft and golden brown.
    • Once the onions are cooked, add the tomatoes, garam masala powder, red chilli powder, coriander powder, and turmeric powder. Stir well and cook until the tomatoes break down into a mushy masala. Taste the masala and adjust the seasoning as needed. Once the masala is cooked to perfection, turn off the heat and set it aside.
  4. Make the Egg Roast Masala Dosa:

    • Preheat your dosa pan or tawa. Pour a ladle of the prepared moong dal dosa batter onto the pan and spread it into a thin circle.
    • Drizzle coconut oil or ghee around the edges and cook the dosa on medium heat for about 1-2 minutes until the bottom becomes golden brown and crispy.
    • Flip the dosa to the other side for a few seconds, then flip it back.
    • Once the dosa turns golden brown and crispy, spread the prepared egg roast masala over one half of the dosa. Place the seasoned sliced boiled eggs on top.
    • Fold the dosa in half, covering the egg filling, and cook for another minute, allowing the masala to warm through.
  5. Serving:

    • Serve the Egg Roast Masala Dosa hot with coconut chutney and a cup of Bellada Coffee for an authentic South Indian breakfast experience.
