Ingredients:

  • 2 eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt

Instructions:

Step Description
1 Put flour and salt on a paper towel (why dirty a dish?).
2 In a bowl, combine milk and eggs.
3 Gently break the eggs and yolk by lifting a fork under them 2 or 3 times. Do not beat it; you should still see the eggs in the milk.
4 Add flour and salt all at once.
5 With a fork, fold the mixture into the milk, leaving it very lumpy. Break up large lumps, but leave it real lumpy for that perfect texture.
6 Liberally spray (lightly if using a non-stick pan) an 8-cup muffin tin with Pam.
7 Fill the cups 3/4 full with the batter.
8 Place the muffin tin in a COLD oven.
9 Set the oven to 450 degrees Fahrenheit and cook for 30 to 35 minutes.
10 If using a 12-cup muffin tin, adjust the cooking time lower.
11 These popovers will come out crisp outside, soft inside, and beautifully puffy!
