Ingredients:

  • 3/4 cup All Purpose Flour (Maida)
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1/8 teaspoon Cinnamon Powder (Dalchini)
  • 1/4 cup Brown Sugar (Demerara Sugar)
  • 3/4 cup Instant Oats (Oatmeal)
  • 1/2 cup Sultana Raisins
  • 1/2 cup Nutralite Classic Spread
  • 1 cup Curd (Dahi/Yogurt)
  • 1 tablespoon Flax Seed Powder (Flax Meal)
  • 3 tablespoons Chilled Water

Preparation Time: 15 minutes
Cooking Time: 30 minutes

Instructions:

  1. Preheat your oven to 180°C and line the muffin cavities with muffin liners.
  2. In a large mixing bowl, combine the all-purpose flour, baking powder, salt, cinnamon powder, and brown sugar.
  3. Add the instant oats and raisins to the dry ingredients, mixing them evenly.
  4. In another bowl, whisk together the Nutralite Classic Spread, yogurt, flax seed powder, and chilled water to create the egg replacer.
  5. Pour the wet ingredients into the dry mixture, stirring until just combined.
  6. Spoon the batter into the prepared muffin cups, filling each about 3/4 full.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool slightly before serving.
