Eggless Ragi & Whole Wheat Crisp Biscuits

These Eggless Ragi & Whole Wheat Crisp Biscuits are a healthy and tasty snack, perfect for weight watchers and kids alike. Packed with the goodness of ragi (finger millet) and whole wheat flour, they make for a delightful treat to pack in your child’s snack box or to enjoy with a cup of tea.

Ingredients:

  • 1/2 cup Ragi Flour (Finger Millet/Nagli)
  • 1/2 cup Whole Wheat Flour
  • 1/2 cup Butter (Salted), cold and cubed
  • 1/2 cup Powdered Sugar
  • 1 teaspoon Baking Powder
  • 2 tablespoons Milk (to knead the dough)

Preparation Time: 50 minutes
Cooking Time: 30 minutes

Instructions:

  1. Roast the Ragi Flour: Begin by roasting the ragi flour in a cast iron pan over medium-low heat. Stir continuously for a few minutes until the aroma of roasted flour fills the air. Set it aside to cool.
  2. Prepare the Dry Ingredients: In a mixing bowl, combine the sifted whole wheat flour, roasted ragi flour, and sifted baking powder. Give it a gentle mix.
  3. Prepare the Butter: Refrigerate the butter for about 20 minutes, then cut it into small cubes. Add these cubes to the flour mixture.
  4. Make the Dough: Using your fingertips, mix the butter with the flour until you get a coarse texture. Add the powdered sugar and mix well.
  5. Add Milk and Form the Dough: Gradually add milk, one tablespoon at a time, to bring the mixture together into a dough. Be cautious not to add too much or too little liquid as it may affect the dough’s texture.
  6. Chill the Dough: Wrap the dough in cling film and refrigerate for 15-20 minutes.
  7. Roll the Dough: Roll the dough on a lightly floured surface using a rolling pin. Ensure the dough is neither too thin nor too thick.
  8. Shape the Biscuits: Cut the dough into your desired shape using a circular biscuit cutter, cookie cutters, or even a lid. Place the biscuits on a greased baking sheet or a silicon mat to prevent sticking.
  9. Bake: Bake in a preheated oven at 180°C (350°F) for 15-18 minutes, until the biscuits turn a light golden brown. Note that the biscuits will still be soft when they come out of the oven.
  10. Cool and Crisp: Let the biscuits cool on a wire rack. As they cool, they will become crisp and delicious.
