Spinach and Eggplant Lasagna Roll Ups Recipe

Ingredients:

  • 3 Japanese eggplants
  • 4 lasagna noodles
  • 1 garlic clove
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 cup tomato sauce
  • 1/2 cup parmesan cheese
  • 1 egg yolk
  • 3 cups fresh spinach leaves

Instructions:

  1. Preheat Oven: Heat your oven to 450 degrees Fahrenheit (232 degrees Celsius).

  2. Prepare Eggplants: Slice the Japanese eggplants thinly. In a bowl, toss the eggplant slices with olive oil, minced garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until evenly coated.

  3. Bake Eggplants: Arrange the seasoned eggplant slices in a single layer on an oiled baking sheet. Bake them in the preheated oven until tender, approximately 12 minutes, flipping them once halfway through.
