Description:
Salmon pâté is a truly delightful spread that makes an elegant addition to any party or brunch. This recipe offers a delicious way to enjoy salmon, whether you’re using a fresh salmon steak or adding a twist with smoked salmon. It’s perfect for spreading on crusty bread or crackers and can be a show-stopper on any appetizer platter. With its creamy texture and fresh, flavorful ingredients, this pâté is both sophisticated and simple to prepare.
Ingredients:
- 1 salmon steak
- 1 bay leaf
- 1 packet of gelatin
- 2 tablespoons chives, finely chopped
- 1/4 cup mayonnaise
- 1 tablespoon fresh dill, chopped
- 1/2 teaspoon Worcestershire sauce
- 2 teaspoons salt
- 1 teaspoon cracked pepper
Instructions:
-
Poach the Salmon:
Begin by poaching the salmon steak with the bay leaf in 1 1/2 cups of water. Bring the water to a gentle simmer, ensuring that the salmon is cooked through and firm to the touch. This step should take about 15 minutes. -
Prepare the Salmon:
Once the salmon is cooked, drain it from the poaching liquid and set the stock aside. Remove and discard the bay leaf, along with any skin and bones from the salmon. Flake the salmon into bite-sized pieces, ready to be blended. -
Soak the Gelatin:
In a small bowl, soak the gelatin in 1/4 cup of the cooled salmon stock. Allow the gelatin to absorb the liquid and soften, which should take around 5 minutes. -
Dissolve the Gelatin:
Meanwhile, heat the remaining stock in a saucepan over low heat. Once warm, stir in the gelatin mixture until it is completely dissolved and well combined. -
Blend the Ingredients:
In a food processor, combine the flaked salmon, mayonnaise, chives, fresh dill, Worcestershire sauce, and the dissolved gelatin mixture. Season with salt and cracked pepper to taste. Process until the mixture is smooth and well blended, creating a creamy and cohesive pâté. -
Chill the Pâté:
Transfer the salmon mixture into a lightly oiled 8″ x 4″ loaf pan. Smooth the top with a spatula to ensure an even surface. Refrigerate the pâté for at least 1 hour, or until it has set firmly. -
Serve:
Once chilled and set, carefully unmold the pâté from the pan. Garnish with a few fresh dill fronds for an added touch of elegance. Serve alongside your favorite crackers or slices of fresh bread.
