Recipe Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Prepare Ramekins: Spray six 3/4-cup ramekins or custard cups with nonstick spray. Place cups in a 13 x 9 x 2-inch baking pan.
  3. Prepare Vanilla Bean Mixture: Scrape the seeds from the vanilla bean into a small saucepan. Add the bean, 1/2 cup of cream, and white chocolate. Stir over low heat just until smooth. Set aside.
  4. Whisk Custard Mixture: In a medium bowl, whisk together 1 1/4 cups of cream, sugar, egg yolks, eggs, sour cream, white rum, and salt until smooth.
  5. Combine Mixtures: Strain the white chocolate mixture into the egg mixture and whisk to blend.
  6. Fill Ramekins: Pour 1/4 cup of the custard mixture into each ramekin, reserving the remaining custard.
  7. Bake: Pour enough hot water into the baking pan to come halfway up the sides of the ramekins. Bake until the custards are set, about 30 minutes. Let stand for 5 minutes.
  8. Prepare Espresso Custard: Add the espresso to the remaining custard mixture and stir until dissolved.
  9. Layer Custards: Spoon the espresso custard over the white chocolate custards, dividing equally.
  10. Bake Again: Bake until the custards are set, about 30 minutes. Remove from the water bath.
  11. Chill: Chill the custards uncovered until cold, about 3 hours. (Can be made 1 day ahead. Cover and keep chilled).
  12. Serve: Before serving, cut around the ramekin sides to loosen the custards. Turn out onto plates and enjoy!
