Ingredients:
- 1 1/4 cups unsalted butter
- 1 cup sugar
- 1/3 cup golden brown sugar
- 1/3 cup water
- 1 tablespoon unsulphured molasses
- 1 tablespoon instant espresso powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 cups walnuts, chopped
- 4 1/2 ounces imported bittersweet chocolate, chopped
- 4 1/2 ounces imported white chocolate, chopped
Instructions:
-
Prepare Cookie Sheet:
- Butter a small cookie sheet and set aside.
-
Melt Butter:
- In a heavy 2-1/2-quart saucepan, melt the butter over low heat.
-
Add Ingredients:
- Add both sugars, water, molasses, instant espresso powder, cinnamon, and salt to the melted butter.
- Stir the mixture until the sugar dissolves completely.
-
Attach Candy Thermometer:
- Attach a clip-on candy thermometer to the side of the pan.
-
Cook the Mixture:
- Increase the heat to medium and cook the mixture until the candy thermometer registers 290°F (143°C).
- Stir slowly but constantly, scraping the bottom of the pan with a wooden spatula, for about 20 minutes.
-
Remove from Heat:
- Once the desired temperature is reached, remove the pan from the heat.
-
Mix in Nuts:
- Mix in 1 1/2 cups of chopped walnuts into the toffee mixture.
-
Pour onto Cookie Sheet:
- Immediately pour the hot toffee mixture onto the prepared cookie sheet. Do not scrape the pan.
-
Spread Toffee:
- Tilt the cookie sheet to spread the toffee to about 1/4-inch thickness.
-
Add Chocolates:
- Sprinkle the chopped bittersweet and white chocolates generously by tablespoons over the toffee, alternating between the two.
-
Create Marble Pattern:
- Let the chocolates sit for about a minute, then use the back of a spoon to swirl them slightly.
- Shake the sheet gently to form an even layer of chocolate.
- Use the tip of a knife to swirl the chocolates further, creating a marble pattern.
-
Add Remaining Nuts:
- Sprinkle the remaining 1/2 cup of chopped walnuts over the chocolate-covered toffee.
-
Chill:
- Place the cookie sheet in the refrigerator and chill until the toffee is firm, approximately 1 hour.
-
Break into Pieces:
- Once firm, break the toffee into pieces of your desired size.
-
Storage:
- The toffee can be made ahead and stored for up to 2 weeks in an airtight container. Serve chilled or at room temperature.
- If you’re giving it as a gift, arrange the toffee pieces in large glass canning jars and wrap ribbons around each jar for a festive presentation.
Enjoy the rich flavors and crunchy texture of this Coffee Walnut Toffee as a delightful homemade treat or a thoughtful gift for loved ones. 🍫🎁
