Ingredients:

  • 1 1/2 cups boiling water ๐ŸŒŠ
  • 1 cup oatmeal ๐Ÿฅฃ
  • 1 cup white sugar ๐Ÿš
  • 1 cup brown sugar ๐ŸŸค
  • 1/2 cup butter, softened ๐Ÿงˆ
  • 1 1/3 cups all-purpose flour ๐ŸŒพ
  • 1 teaspoon baking soda ๐Ÿฅ„
  • 1 teaspoon cinnamon ๐Ÿ‚
  • 2 eggs ๐Ÿฅš
  • 1 teaspoon vanilla extract ๐ŸŒฟ
  • 1 cup raisins ๐Ÿ‡

Instructions:

  1. Prepare Oatmeal Mixture:

    • Pour boiling water over oatmeal in a bowl.
    • Set aside to cool.
  2. Prepare Cake Batter:

    • In a separate large mixing bowl, cream together white sugar, brown sugar, and softened butter until light and fluffy.
    • To the creamed mixture, add the cooled oatmeal mixture, all-purpose flour, baking soda, cinnamon, eggs, vanilla extract, and raisins. Mix until well combined.

  4. Prepare Icing:

    • While the cake is baking, prepare the icing.
  5. Make Icing:

    • In a saucepan, combine butter, brown sugar, and vanilla extract.
    • Cook over medium heat, stirring constantly, until the mixture comes to a boil.
    • Remove from heat.
  6. Finish Cake:

    • Once the cake is baked, remove it from the oven.
    • Immediately spread the prepared icing evenly over the hot cake.
  7. Broil:

    • Place the iced cake under the broiler for a few minutes until the icing is bubbly and lightly browned.
  8. Serve and Enjoy:

    • Allow the cake to cool slightly before slicing and serving.
