Ingredients:

  • 1 tsp ground cardamom
  • 1/2 tsp ground allspice
  • 1/8 tsp cayenne pepper
  • 2 boneless skinless chicken breast halves
  • 3 tbsp butter
  • 1 onion, diced
  • 1-inch piece of fresh ginger, minced
  • 1 cup water
  • Salt and pepper to taste

Instructions:

  1. Prepare the Spice Mixture:

    • In a small bowl, combine the ground cardamom, ground allspice, and cayenne pepper. Set aside.
  2. Season the Chicken:

    • Sprinkle both sides of the chicken breast halves with the spice mixture.
  3. Sauté the Chicken:

    • In a heavy medium skillet, melt 2 tablespoons of butter over medium-high heat.
    • Add the seasoned chicken to the skillet and sauté until browned, about 4 minutes on each side.
    • Once cooked, transfer the chicken to a plate and set aside.
  4. Prepare the Onion and Ginger:

    • In the same skillet, melt the remaining 1 tablespoon of butter.
    • Add the diced onion and sauté for 3 minutes until softened.
    • Stir in the minced ginger and sauté for an additional 1 minute.
  5. Simmer the Chicken:

    • Return the cooked chicken to the skillet with the onion and ginger mixture.
    • Pour in 1 cup of water and bring it to a boil.
    • Reduce the heat to medium-low, cover the skillet, and simmer until the chicken is cooked through, about 7 minutes.
  6. Thicken the Sauce:

    • Once the chicken is cooked, transfer it to two plates and cover with foil to keep warm.
    • Increase the heat to boil the sauce until slightly thickened, approximately 7 minutes.
    • Season the sauce with salt and pepper to taste.
  7. Serve:

    • Spoon the thickened sauce over the cooked chicken breasts.
