Exotic Fruit Chocolate Salami Recipe

Ingredients:

Butter 20g
Digestive biscuits 75g
Mixed dried fruit 50g
Dried dates 50g
Candied ginger 10g
Dried coconut 10g
Rum 10g

Instructions:

  1. Melt the Chocolate
    Begin by melting the dark chocolate. You can do this using a double boiler (bagnomaria) or microwave it in short bursts. Stir occasionally until it’s completely melted and smooth. Add the butter to the chocolate and stir until the butter is fully incorporated and melted.

  2. Prepare the Dried Fruits
    While the chocolate mixture cools slightly, chop up the dried mango, pineapple, and papaya into small pieces. Place them in a bowl and add the rum. Let the dried fruit soak up the rum for a few minutes.

  3. Chop the Other Ingredients
    Next, chop the candied ginger and dried coconut into small pieces. Set them aside for later.

  4. Crush the Biscuits
    Break the digestive biscuits into small, rough pieces in a separate bowl. You can use your hands or a rolling pin to crush them into crumbly bits.

  5. Combine the Ingredients
    In a large mixing bowl, add the soaked dried fruit, crushed biscuits, chopped ginger, and coconut. Mix everything together thoroughly.

  6. Add the Chocolate Mixture
    Pour the melted chocolate and butter mixture over the dry ingredients. Stir everything together until you have a cohesive, thick mixture. Ensure that all the ingredients are well-coated in the chocolate.

  7. Shape the Chocolate Salami
    Lay a sheet of parchment paper on a flat surface and dust it lightly with powdered sugar. Transfer the chocolate mixture onto the parchment paper. Using your hands, shape it into a log or “salami” shape. Be sure to press it firmly and evenly as you roll.

  8. Wrap and Chill
    Once the chocolate mixture is shaped, carefully wrap it in the parchment paper like a candy, twisting the ends to secure it. Transfer the wrapped salami to a tray and refrigerate for at least one hour to firm up.

  9. Serve
